Dutch Oven Venison Chili

INGREDIENTS

  • 1 pound venison, ground or cubed

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 4 cloves garlic, sliced or minced

  • 1 tablespoon chili powder

  • 1 tablespoon unsweetened cocoa powder

  • 2 teaspoons cumin

  • 1 teaspoon coriander

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon cinnamon

  • Salt and pepper to taste

  • 1 6-ounce can tomato paste

Dutch Oven Breakfast

INGREDIENTS

  • 1 pound bacon, ham or sage sausage

  • 1 26-ounce package of frozen hash browns, or equivalent

  • 1 dozen eggs

  • 2 cups shredded cheddar cheese

  • Salt and pepper to taste

DIRECTIONS

Grits and granola will do the trick for a day or two, but after just a few mornings in the woods I'm ready for a breakfast hearty enough to get me over the mountain or around the next river bend.

One Pot Chicken, Rice and Veggies

Prep Time: 10 minutes 

Cook Time: 25 minutes

INGREDIENTS

  • 2 large chicken breasts (1 ½ pounds of chicken)

  • 2 tbs. of your favorite chicken rub, such Hi Mountain Poultry Rub

  • 1 package Knorr Sides Rice Medley

  • 12 oz. bag Vegetable Medley or 1 cup each of broccoli, cauliflower and carrots

  • 4 tbs. olive oil

  • 2 cups water

  • ½ tsp. salt

  • ¼ tsp. pepper

  • Grated cheese, optional

  • 3-4 bananas

  • 1 tbs canola oil

  • 1 small bar milk or dark chocolate, broken into squares

  • 1/2 cup toasted almond pieces

DIRECTIONS

1. Leaving the peel on, cut the bananas in half, lengthwise.

2. Brush cut side with canola oil and place skin side up on a well lubricated medium hot grill.
