Lemon Smoked Trout

Ingredients

  • Approximately 2 half pound trout
  • 1 lemon
  • salt
  • paprika
  • cayenne pepper

Directions

Clean fish leaving head and skin on. Rub the lemon on the inside of the fish. Mix the salt, lemon pepper, paprika and cayenne pepper and rub it on the inside of the fish.

Place the fish on the smoker rack or hang from hooks depending on type of smoker you have. Add whole peppercorns and lemon peels to whatever type of smoking material you are using (I use hickory sawdust with a mix of chicory) .Smoke fish for approximately 15 to 25 minutes (again depending on type of smoker). Serve with potato salad, and a nice cold beer.

Cabo Wabo Trout

Ingredients

  • 2 Lbs. Speckled trout Fillets  
  • Tomatoes
  • Onions
  • Cilantro
  • Lime juice  
  • 1 oz tequila (optional)  
  • Olive oil 
  • Paprika
  • Salt & pepper

Directions  

Arrange trout fillets in large baking dish and sprinkle with olive oil. In seprate bowl mix Chopped tomato,onion, cilantro, lime juice and 1 oz.tequila..(sample tequila) You can also used pre-prepared Pico degilo. Spoon pico on the fillets about 2 tbls per fillet. Sprinkle with salt, pepper and paprika. Broil for about 5-7 min or till the fish flakes with a fork. This is one of my favorite ways to prepare fresh Trout!!! Enjoy

Baked Lake Trout

Ingredients

  • 1/4 cup chopped onion  
  • Lemon slices  
  • Salt and pepper to taste

Directions  

Fillet and skin a 3 to 4 lb. lake trout.  Arrange 2 fillets next to each other on Aluminum foil.  Spread chopped onion on fish  Put a slice or two of lemon on each fillet.  Salt and pepper to taste  Wrap tightly in foil and bake 20 minutes on each side in 350 degree oven or on the grill.  When done, unwrap fish, throw away, and eat the foil! Bon appetite!
