Old boy scout recipe that's a family favorite.
Nice and simple
1 Eye round of beef
1 box of kosher salt
1 big bottle of yellow mustard
Start a fire to get a nice bed of coals (charcoal can be used in a pinch but use natural avoid the match light crap)
When the coals are ready generously coat the eye round with the mustard, really slather it on.
When you get it good and covered take the kosher salt and completely cover the mustard .
Then place directly on the hot coals give it a 1/4 turn every 5-10 minutes about 20-30 minutes depending on how rare you like.
This is a great recipe to get the kids involved in they love slopping mustard and generally making a mess.
We usually serve with baked potatoes also cooked in the fire.
